Why recipe costing matters before you price a menu

Every dish on a menu has a floor price. Go below that floor and you lose money on every sale. The formula is simple: if a recipe costs $4.50 to produce and your target food cost is 30%, the minimum menu price is $4.50 / 0.30 = $15.00. Charge $13 and you are running a 34.6% food cost without knowing it.

The waste and trim factor most calculators ignore

Raw ingredient cost understates your true food cost because a portion of every ingredient is unusable. When you trim a chicken breast, you lose silver-skin. When you peel a potato, you lose the skin. When you cut a baguette for service, you lose the ends. These are real food costs that never hit the plate.

The formula adjustment: true food cost = raw ingredient cost x (1 + waste factor). A recipe with $10 of raw ingredients at 10% waste actually costs $11 to produce. At scale, ignoring this turns 30% food cost into 33% food cost without any recipe change.

Why your minimum price is always rounded up, never down

Divide $3.37 by 30% and a calculator gives you $11.22, not a clean quarter-dollar figure. This worksheet does not round that to the nearest cent or nearest dollar; it rounds up to the next quarter, so $11.22 becomes $11.25. The same rule turns $1.92 into $2.00 in the lemon tart example above, and it will round $14.01 up to $14.25 just as readily as it rounds $14.24 up to $14.25. That one-directional rule is deliberate: rounding a minimum price down, even by a few cents, means selling below your stated food cost target on every single order. Rounding up by up to 24 cents costs you nothing on any individual order and protects the floor you set. If your point-of-sale system needs a whole-dollar or a $X.95 price instead, treat the worksheet's rounded number as your true floor and round further up from there, never down.

Where food cost percentage alone can mislead you

A dish can hit its target food cost percentage exactly and still lose money. Food cost percentage measures one input, ingredients, against price. It says nothing about how long a dish takes to prep, how much of your kitchen's labor hour it consumes, or how much equipment time and energy it uses.
